Yum


Well the kids and Darren were off to the ward camp out in the rain. Kid #3 and I stayed home to cuddle in the warm house. Never fails that it rains every year at the camp out, buy no matter how hard we tried, we couldn't convince the kids that they needed to stay home this year. I decided to make Darren's favorite chili and snuggle up with a book after putting the baby down for the night.

I made up this recipe for Chili a few years ago and it was a hit, so we keep making it. It makes my mouth water thinking about it.

Jeni's chili
1 small onion chopped
1/2 green pepper, chopped
1 lb ground beef or ground turkey
1 clove garlic
1 TBSP oil
Saute in large pot until beef is cooked. Then mix in :
2 TBSP Chili powder
2 tsp salt 1 tsp cummin
1/2 tsp black pepper
1 tsp oregano
1 tsp Adobo powder
1/2 tsp paprika
1/4 cayenne pepper or your favorite chili sauce we like tapatio or cholula

Don't forget to change to your own spicy needs.
Then add:
1 28 oz can of Diced or crushed tomatoes
1 14 oz can of diced or crushed tomatoes
1 14 oz can of kidney beans, drained and rinsed.
1 14oz can of canellini (white) beans, drained and rinsed
1 can of corn, drained
Simmer for 1/2 hour. Serve with cheese and sour cream.
I am not sure how many this serves. Sometimes I freeze half for later and we still eat half for 2
meals.

Thanks so much for posting that - I have been wanting to make chili but didn't want to experiment with any online recipes.. I love all of your recipes, though! My family thanks you tomorrow night. :) Now I need a gluten-free cornbread recipe...

Ooh! That looks great! As soon as it gets a little cooler here, you'd better believe I'm giving that one a try!

How are you liking the book? I read it in junior high and then picked it up a few years ago to reread.
