We loved this new recipe!

Kid#1 especially loved this, she is thrilled when ever I don't force her to eat meat. D & I added Cholula to give it a kick and it was perfect.
Vegetarian Stuffed Peppers
These filling and flavorful peppers are an updated version of my mom's stuffed peppers, which were a favorite when I was growing up in upstate New York. Whenever I make them, I'm reminded of home. —Melissa McCabe Long Beach, California
Ingredients:
- 6 large sweet peppers
- 2 cups cooked brown rice
- 3 small tomatoes, diced
- 1 cup frozen corn, thawed
- 1 small sweet onion, diced
- 1/3 cup canned red beans, rinsed and drained
- 1/3 cup canned black beans, rinsed and drained
- 3/4 cup cubed Monterey Jack cheese
- 1 can (4-1/4 ounces) chopped ripe olives
- 4 fresh basil leaves, chopped
- 3 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup meatless spaghetti sauce
- 1/2 cup water
- 4 tablespoons grated Parmesan cheese, divided
Directions:
Cut tops off peppers and remove seeds; set aside. In a large bowl, combine the rice, tomatoes, corn, onion and beans. Stir in the Monterey Jack cheese, olives, basil, garlic, salt and pepper. Spoon into peppers.Combine spaghetti sauce and water; pour half into an oval 5-qt. slow cooker. Add the stuffed peppers. Top with remaining sauce. Sprinkle with 2 tablespoons Parmesan cheese.
Cover and cook on low for 3-1/2 to 4 hours or until peppers are tender and filling is heated through. Sprinkle with remaining Parmesan cheese. Yield: 6 servings.

YUMMY! Perfect for Father's Day dessert
I can't believe how good this was. Darren loves bananas and caramel. I think they're ok...but this was luscious!

Banana's FosterINGREDIENTS
- 1/4 cup butter
- 2/3 cup dark brown sugar
- 3 tsp rum extract +6 tsp water
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 3 bananas, peeled and sliced lengthwise and crosswise
- 1/4 cup coarsely chopped walnuts
- 1 pint vanilla ice cream

- In a large, deep skillet over medium heat, melt butter. Stir in sugar, rum extract, vanilla and cinnamon. When mixture begins to bubble, place bananas and walnuts in pan. Cook until bananas are hot, 1 to 2 minutes. Serve at once over vanilla ice cream.

I've been Tagged...watch out you're next!
Well I have seen others tagged before, and assumed it would happen to me eventually. Now as I sit here trying to be myself, but not bore you to death; I am not sure if it is so great. Thanks Self-Baked pizza!

1. What was I doing 10 years ago?
We were living in an old one bedroom apt,in a old house that was split into 4 apartments all full of newly-wed couples. It was sweet and cozy,just was too bad the walls were really thin. I worked for USU campus landscaping crew and D was working on the sprinkler crew. We got up bright and early to be at work by 7am, we had lunch together everyday and was home by 3pm. It was hard, hot work, but I would go back in a second. We had so much time to just take off and go camping or do whatever. Plus, Our relationship didn't get crazy before we realized we hadn't had alone time for weeks.
2. What are five things on my to-do list today?
I don't do lists lately. I am lucky if I get to exercise, and get dressed by noon. Today I have already done both, so I guess I will try to get to the bank to order new checks- been out for a while. Good thing there is a thing called internet bill pay! I am also going to hunt for some boxes so I can start the move. We are finally going to move into a bigger place. It will be luxury to live with an extra half bath, room, dining room, laundry, and more storage! But we are just moving into a 3 bdrm townhouse with a den. But going from 650sq ft to over 1200 sq ft will be awesome!
3. What are some snacks I enjoy?
This is a silly question! I love food and since I am nursing and trying to lose the weight by eating low sugar, everything that has sugar and carbs sounds good. I guess everyday I chose one cal snack to indulge on so I don't binge and go crazy. That usually is one frozen snack size piece of good chocolate. I freeze it, because it takes longer to eat it, then as it slowly melts, I can savor it and be satisfied. Also, it helps with the "out of sight, out of mind" theory. I also like occasionally Cinnamon grahams dipped in milk,or low-fat microwave kettle corn.
4. Things I would do if I were a billionaire.
Buy a House!!! Not really a huge house just a normal 4 bdrm with a garage and big yard. D being a forever student and now post-doc looking for a tenure position at a university has kept us from having the income (including the crazy high prices of housing where we live)to purchase a home. Once that happens I can think about other things like travel, feeding a small country etc.....
5. Places I've lived.
Utah, Minnesota, New Hampshire. Great places, all very different. We were happy at each place, all for different reasons. I truly believe you can be happy where ever you go, its all in what you make of it.
